Well, I have a favorite herb: papalo. Also called papaloquelite, quillquina, Bolivian coriander (although it's unrelated to coriander), and poreleaf. Popular in Bolivia and some parts of Mexico. Smells/tastes like a funky cilantro. Green and happy even on the hottest summer days - even my halfhearted gardening produced a bumper crop of near-perfect leaves with a texture like...if there's such a thing as "delicate leather", that's the texture. What looks like semi-opaque seeds embedded in the leaf are actually tiny oil glands (hence the "poreleaf" name).

Huevos rancheros with chorizo.

(Firefox wants to correct the spelling to "Hues ranchers with horizon" heh.)
